With apple season ending, there is still an abundance of local apples available to us. Perhaps with so much around we may eaten too much, I noticed a few lonely spartan apples in the fridge not being consumed. So I thought, let's have some for breakfast in some pancakes. I prefer the taste of apple chunks but I know the kids don't. So it looks like I will need to grate the apples. The batter turned out not to be thick as the ratio of flour was lower than I normally do. I really enjoyed the texture of this version as it does not leave you with that heavy feeling in your stomach after a large meal.
Apple Pancakes

Ingredients:
2 eggs
2 teaspoon sugar
1/2 cup milk
1 teaspoon vanilla
1/2 cup flour
pinch of cinnamon
1 large or 2 small apples, peeled and cored
butter or magarine for frying
Directions:
1) In a medium bowl, beat eggs with sugar. Add milk and vanilla and mix.
2) Add flour and cinnamon and mix.
3) Chop up or coarsely grate the apple. Cut a few slices if you want to use garnish or cook with the pancakes.
4) Add apple to the batter.
5) Adjust the batter by adding flour and/or milk. The batter should be thick but pourable.
6) Add enough butter or magarine (or oil) to just coat your frying pan and let it melt over medium heat. Ladle in batter to create a few pancakes at a time. Flip once after golden brown.
7) Serve with icing sugar, cinnamon sugar and/or maple syrup.
