I grew up eating rice with all my meals. Maybe that's why I really love pasta....because I could never get enough. I bought some sun-dried tomatoes yesterday, and thought it would be a good time to do a pasta dish. This is very simple to do, and it was a refreshing change.
Sun-Dried Tomato Pesto Pasta

Ingredients:
500 grams pasta (spaghetti or linguine)
150 grams sun-dried tomatoes
3 tablespoon toasted walnuts (or pine nuts)
1 garlic clove
1/2 teaspoon hot pepper sauce (or dried chili flakes)
6 teaspoon extra virgin olive oil
salt and pepper
Directions:
1) Cook pasta in salted water until al dente. Drain reserving some of the pasta water.
2) Blend together sun-dried tomatoes, walnuts, garlic, chili, pepper sauce, and oil. Season with salt and pepper to suit your taste.
3) Toss the pasta and sun-dried pesto in the pasta pot until pasta is well-coated. Add some reserved pasta water if required.
4) Serve with parmesan cheese and fresh basil.
Serves 4.
