One of my daughters loves fruits, preferably raw. If she can see the fruit in a dessert, like my Upside Down Peach Cake, she will not eat it! If the fruit is mashed and baked in like my Banana Chocolate Mini Muffins, there is a chance she will eat it. Strangely enough, she enjoys this simple berry fruit sauce that I make to add to breakfast dishes like pancakes or french toast. However I must have strawberries in it!
I discovered that if I used frozen fruits, the sauce is quicker and easier to make. I like to use frozen raspberries as it is easy to crush and provides a good base for the sauce. A mixture of frozen and fresh fruits also works well.
Berry Fruit Sauce for Breakfast Dishes

Ingredients:
frozen raspberries
frozen strawberries (chop up if large)
frozen blueberries
3 or 4 tablespoons water
dash of lemon juice (optional)
sugar (optional)
Directions:
1) In a small sauce pan on medium high heat, add all the fruits, water and lemon juice. If the fruits are fresh but tart, add a little sugar. Once the water is bubbling, reduce the heat to medium.
2) Remove once you the water is mixed with the fruits and the sauce has reached the desired thickness for you.
3) It's now ready to add some zing to any breakfast dish!
