Chocolate Swirl Cheesecake



It's great when you can learn to make a dessert like cheesecake but then there are so many variations you can apply that it transforms into a completely different dessert.  This Chocolate Swirl Cheesecake is just that.  If you started by making a basic Chocolate Cheesecake, then this is a slight variation.  I got this recipe from Kraft Foods a few years ago but have modified adding a home-baked crust and adjusting the directions a bit.

Chocolate Swirl Cheesecake

Ingredients:
Crust
1 cup Oreo Baking Crumbs
1/4 cup sugar
1/4 cup melted butter

Filling
4 squares BAKER'S Semi-Sweet Chocolate
2 packages (8 oz each) PHILADELPHIA Cream Cheese, softened, divided
1/2 cup sugar, divided
2 eggs
1/2 teaspoon vanilla

Directions:
1)  Combine Oreo Baking Crumbs with sugar and melted butter.  Press onto bottom of an 8 or 9 inch springform pan.  Bake at 325F for 15 minutes.  Remove from oven and allow to cool.
2)  Preheat oven to 350F
3)  In a large bowl, melt chocolate using double boiler technique or microwave.
4)  Add 1 package cream cheese, 1/4 cup sugar and 1 egg.  Beat with whisk until well blended.  Pour into crust.
5)  Beat remaining cream cheese, sugar, egg and vanilla in the same with a different whisk until well blended.  Spoon over chocolate batter.  Swirl gently with knife.
6)  Bake for 40 minutes or until center is almost set.  Cool.  Refrigerate for at least 3 hours.  Let stand at room temperature for 10 minutes before serving.
