Apple Pannekoek / Pannenkoek (Dutch Apple Pancake)


I hate having the same old boring pancakes.   While it is very good, I want to start changing things up a bit and surprising the family.  I started with the Puffed Pancake in the my last post and I wanted to try the Appel Pannenkoek I saw on Almost Bourdain.

According to wikipedia, Pannenkoek is a Dutch pancake is usually larger and thinner than American pancakes.  They may incorporate slices of smoked bacon, apples or other fruits, stem ginger, cheese or raisins.  Plain ones are often eaten with white or brown sugar.  I liked the ingredients used on Almost Bourdain and made no changes to the recipe.

Apple Pannekoek / Pannenkoek (Dutch Apple Pancakes with Caramelised Sugar)

Serves 2 (Makes 2 large pancakes or 4 small pancakes)

Ingredients:
1 cup (200 g) flour
1/2 tsp baking powder
A pinch of salt
2 eggs
2 apples (I use Granny Smith)
Lemon juice
Caster sugar
Cinnamon sugar
Butter

Directions:
1)  Peel and core the apples and slice them thinly. Turn them in lemon juice so they retain their color.
2)  Combine the flour with the baking powder and salt, and add enough cold water to make a thick batter. Stir in the eggs.
3)  Heat a little butter in a skillet and spoon in the batter.  Immediately arrange the apple slices like tiles on top of the pancakes. Sprinkle with sugar and cook until the pancake is brown.
