Mini German Pancakes


Time for yet another pancake....this time Mini German Pancakes recipe that I saw on Real Mom Kitchen.  This photo is from my second attempt.  My first attempt at making the pancakes did not create the same lovely shells.  You can see the picture below.  Something went horribly wrong and I did not get the puff.  My guess is I forgot to add the butter!


Even though I messed up on the first attempt, the girls really liked it anyways and proceeded to polished 3 each. More importantly, I was able to try it again with willing volunteers.  They enjoyed the second attempt even more. This recipe has become a regular staple for our weekend breakfasts!




Mini German Pancakes
Printable Recipe

1 cup milk
6 eggs
1 cup flour
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon orange zest (optional)
1/4 cup butter, melted

Directions:
1)  Preheat oven to 400 degrees F. Blend first six ingredients (milk thru orange zest) in a blender. Be careful to see that any flour clumps get well-blended.
2)  Blend in butter a little at a time in order to temper the eggs.
3)  Grease muffin tins well and distribute batter evenly between 24 tins pouring an almost full 1/4 cup measuring cup.  Bake for 15 minutes, or until puffy and golden on top.
4) Served with your favorite toppings.  We used varied combinations of my fruit sauce, maple syrup and powdered sugar.
