Chocolate Banana Muffins

My youngest daughter loves Mini Chocolate Muffins that we make.  It is one of her favourite things for breakfast.  I wanted to varied it for her and gave this Chocolate Banana Muffins on For The Love Of Cooking a try.  It tasted ok on the day it was baked but it was tough as nails the next day.  I am sure the recipe itself was fine, but I must have overmixed.  Perhaps making them into mini muffins did not help!

Chocolate Banana Muffins

Ingredients:
1 1/2 cup whole wheat flour
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/3 cup canola oil
1/2 cup white sugar
1/2 cup brown sugar
2 very ripe bananas, mashed
1 egg

Directions:
1) Preheat the oven to 350 degrees and coat a muffin pan with cooking spray.
2) Mix the flour, cocoa powder, baking soda, salt, and baking powder together in a bowl.
3) Combine the oil, sugars, egg, and mashed banana and mix until creamy.  Slowly add the flour mixture into the egg mixture and stir until just combined.
4) Spoon the muffin batter into the prepared muffin pan.
5) Bake for 18-20 minutes or until a tester inserted in the middle of a muffin comes out clean. Cool the muffins on a rack.
