Pork Chops with Caramelized Apples

Everybody knows that pork and apple goes well together, but for some reason we rarely have apples whenever we cook pork.  I tried this simple recipe I found on Food Fit.  It was a quick and tasted great.  I used apple juice instead of the apple cider called for in the recipe.

Pan-Seared Pork Chops with Caramelized Apples

Ingredients:
1 teaspoon olive oil
2 pork loin chops (about 4oz each)
salt and pepper to taste
1 medium yellow onion, thinly sliced
1/2 teaspoon thyme
2 tart appples, peeled, cored and sliced
1/2 cup apple cider

Directions:
1) Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper and sear them on both sides until just cooked through, about 4 to 6 minutes per side.
2) Transfer the cooked chops from the pan to a platter and keep warm. Turn the heat on the pan down to medium and add the onion and thyme. Season with salt and pepper and cook until the onion begin to wilt. Turn the heat to high and cook until the onions are golden brown.
3) Add the apple cider and apples and cook until the cider has reduced and slightly thickened and the apples are tender, about 6 minutes.
4) Serve the pork chops topped with the apple-onion mixture and enjoy!
