Baked Cherry Donuts

Ever since I got the donut pans, the girls want donuts every weekend. They like it plain, but I certainly do not. I have been experimenting with different fruits and cherry was an excellent choice. Where else can you get a cherry donut with decent size fruit chunks!

Ingredients:
2 cups cake flour, sifted
3/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup buttermilk
2 eggs, lightly beaten
2 tablespoons butter, melted
cherries, seed removed and cut in quarters
confectioners' sugar (optional)

Directions:
1) Preheat oven to 425F. Spray donut pan with nonstick cooking spray.
2) In large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter. Beat until just combined. Add cherries and fold gently. Fill each donut cup approximately 2/3 full.
3) Bake 7-9 minutes or until the top of the donuts spring back when touched. Let cool in pan for 4-5 minutes before removing. Finish donuts with confectioners' sugar. Donuts are best served fresh.
