Chana Pulao (Chickpea Rice)

Chana Pulao

We eat fried rice frequently and I wanted a change.  This Chana Puluo recipe on Honey, What's Cooking? looked delicious.  My photo does not do it justice!  Also I realized that one of the key differences was the rice.  I used a long-grained rice that is sticky when cooked.  I will need to change that the next time I try this recipe.

Ingredients:
1.5 cups rice
3 cups water
1 tablespoon oil
2 medium onions sliced
1 15 oz. can chickpea rinsed and drained
2 teaspoons jeera seeds
1/2 teaspoon mustard seeds
3 dry red chillies (broken)
3 cloves
1/2 cinnamon stick
1/4 teaspoon tumeric
1.5 teaspoon masala
salt to taste

Directions:
1)  Heat a pot on medium heat, add oil, add the jeera and mustard seeds, chillies, cloves, cinnamon stick and turmeric powder. Saute for 1-2 minutes.
2)  Add the onions and salt. Saute until golden. This will take about 5 minutes.
3)  In the meantime, wash the rice and set aside.
4)  Add the 1 teaspoon masala to the onions. Mix.
5)  Add the washed rice to the onions and combine. Cook for 2 minutes. This will help toast up the rice. 6)  Add 3 cups of water and 1/2 teaspoon masala. Adjust salt.
7)  Add the chickpeas.
8)  Cover and simmer on low-medium heat for 20-30 minutes. Keep checking.
9)  You can garnish with coriander leaves.
