I am always looking for strawberry recipes as this is one of my daughter's favourite fruits. The whole family absolutely loved the Southern Peach Cobbler that I made before. So I definitely was eager to try this Strawberry Cobbler on the Nesting Project.
As you can see the cake to strawberry ratio did not seem right. Perhaps the strawberries I used were too big. It certainly looked much different when I first saw the original recipe. The cake was a bit tougher that I would have liked. I guess what I am saying is that I will still be searching for another strawberry cobbler recipe. You definitely have to eat this one warm!
1 quart fresh strawberries
1/4 pound butter
1 cup milk
1 cup self rising flour
1 cup sugar
1/4 teaspoon ground cinnamon
Whipped cream (optional)
Directions:
1) Pre-heat the oven to 400F.
2) Hull the strawberries. Melt butter in an 8x12 inch baking dish in preheated oven about 4 minutes.
3) Remove dish from oven. Add milk, flour, sugar and cinnamon to the baking dish and stir until just mixed. Arrange strawberries, tips pointed up, on top of the batter.
4) Bake cobbler in oven until golden brown, about 25 minutes. Serve warm or at room temperature.
Makes 8 servings.
