I love simple recipes and this chicken yakitori recipe on Jessica Gavin website definitely fits the bill.  Anything skewered is always a bit hit with  everyone.

Ingredients:
Chicken Skewers:
4 Chicken thighs, skinned, boned, cut into 1 inch cubes
8 Bamboo skewers, soaked in water for 1 hour
Salt

Yakitori Basting Sauce:
½ cup Mirin
¼ cup Sake
¼ cup soy sauce
2 tablespoons sugar
1 teaspoon fresh ginger root, grated
1 cup onion, minced

Directions:
1) To make basting sauce, over medium heat, combine the mirin and sake for 5 minutes.  Add shoyu and sugar; stir to dissolve the sugar.  Cook over low heat for 25 minutes; cool before using.
2) Combine remaining ingredients with sauce and marinate 1 hour.
3) Preheat broiler or grill.  Thread the chicken on skewers and season with salt.  Grill (broil) for 3 minutes on each side, basting frequently with the marinade.  Serve immediately
