I am always on the lookout for great tasting recipes that require very little effort. This simple cassava pone recipe is one of these gems that I have made many times before but not lately. I got this recipe from one of my aunts. The picture above does not do justice to this dessert ....but at least I got it on camera before it was all gone.
Simple Cassava Pone (Phillipino style)

Ingredients:
2 packages (16 oz each) grated cassava
1 1/2 can (600ml) coconut milk OR 1can coconut milk plus 1/2 can homo milk
2 tablespoons melted butter
2 eggs
1 1/3 to 1 1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
Directions:
1) Mix all the ingredients together.
2) Pour into an ungreased 8" x 14" pan
3) Bake at 350F for about 1 hour. It is ready when toothpick comes out clean.
