Should this dessert be called Strawberry Flognarde or Strawberry Clafoutis? Clafoutis is a delicious French dessert that is simply baked cherries in a batter. If any other fruits other than cherries, it is then called a flognarde. Having just a glimpse of this dessert on Gastronomer's Guide, and having a name that I was unfamiliar with drew my attention immediately.
I knew for sure we had no cherries, so I checked the refrigerator to see what fruits we had. Strawberries it is! I adapted the Plum Flognarde recipe to incorporate strawberries instead. The end result was a yummy dessert! The only downside was the top was a bit wet, but not from being underbaked. The strawberries had too high a water content. Next time, I will likely try another fruit. If I did try strawberries again, it might be worth letting the sliced strawberries sit longer in the sugar to draw out more of the water before placing them in the baking dish.
This recipe is definitely a keeper!

Ingredients:
12 ounces strawberries
1 tablespoon sugar for strawberries
1/2 cup all-purpose flour
1/2 cup sugar
1/4 teaspoon salt
1 cup milk
3 eggs
3 tablespoons butter, melted and cooled
1 teaspoon pure vanilla extract
2 tablespoons sugar for topping

Strawberry Flognarde

Ingredients:

1 tablespoon sugar for strawberries

1) Clean, hull and slice strawberries. In a bowl add 1 tablespoon sugar and mix. Let it sit for 10 minutes to help remove excess moisture.
2) Butter a shallow 2-quart dish.
3) Preheat oven to 375F.
4) In a large bowl, add flour, 1/2 cup sugar, salt, milk, eggs, butter and vanilla. Whisk together.
5) Drain liquid from strawberries. Place strawberries in dish and pour batter on top.
6) Bake for 30 minutes. Sprinkle 2 tablespoons sugar over the top and bake for an additional 20 minutes.
7) If a darker color is desired, broil for 2 minutes.
8) Cool and serve.
