French Toast



Some days you get up and need a lift! Why not start the day with a quick but tasty breakfast to kickstart the day? French toast comes to mind often dusted with some powdered sugar or topped with a delicious fruit sauce.

French Toast (for 4)

Ingredients:
6 eggs
splash of milk
1/2 teaspoon vanilla extract
dash of cinnamon
8 slices of bread
butter
maple syrup

icing sugar (optional)
berry fruit sauce (optional)

Directions:
1) In a wide, shallow bowl or pie plate, whisk together eggs, milk, vanilla and cinnamon.
2) Using a large frying pan set on medium, melt some enough butter (about 1/2 tablespoon) to just coat the pan.
3) Dip one slice of bread into the wet mixture. Let it sit for a few seconds to soak in the liquid. Turn over and let it sit again for a few seconds. Transfer to frying pan. Keep adding more slices of bread as there is space in the frying pan. Cook for 2 to 3 minutes. Flip and cook for another 2 to 3 minutes. It should be lightly brown on both sides.
4) Serve immediately with maple syrup. You can also top with icing sugar and/or berry fruit sauce.
