French Breakfast Puffs


What a great way to start the day!  I made these French Breakfast Puffs using the recipe on Kara's Kitchen Creations.  By the end of breakfast, they were almost gone and finished a few hours later by the girls.  Needless to say, they tasted great especially when you eat them warm.  As a variation, I might toss some walnuts or pecans next time.

French Breakfast Puffs

Ingredients:
1/3 cup butter, soft
1/2 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup milk
1 1/2 cups flour
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/4 tsp nutmeg
1 1/2 teaspoon melted butter
2 teaspoon cinnamon sugar

Directions:
1)  Cream butter and sugar till fluffy. Add egg, vanilla, and milk. Stir in dry ingredients just till moistened.
2)  Preheat oven to 350°F.
3)  Fill greased muffin cups about 2/3 full.  Bake for about 18 minutes.
4)  While still warm, roll the top of the puffs in melted butter, then in cinnamon sugar mixture.

Makes 10-12 puffs

Notes:
If you are rolling the entire muffin in butter, you will need about 1/3 cup, and more cinnamon sugar of course.
