Banana-Oat Cookies



My daughter first tried these cookies at my Aunt Liz's cottage when she was three and she has been hooked ever since.  I have modified the base recipe to add optional ingredients such as dried cranberries and/or walnuts to give it some pizazz.  I don't just add a little....I add a lot depending on what each of us likes.  For some reason, the kids don't like any nuts in theirs.

Banana-Oat Cookies

Ingredients:
1 1/2 cup oats
1/2 cup whole wheat flour
1/2 teaspoon salt
1/4 teaspoon baking powder
dash of ground cinnamon
1 cup mashed banana (about 2 medium)
3/8 cup oil
dried cranberries (optional)
walnut pieces (optional)

Directions:
1)  In a large bowl, mix oats, flour, salt, baking powder, cinnamon.
2)  In a small bowl, mix banana and oil until oil is no longer visible.
3)  Pour contents of small bowl into large blow.  Mix until all ingredients moist.
4)  Add in optional ingredients to suit your taste.
5)  Preheat oven to 350F.
6)  Drop heaping teaspoons on an un-oiled cookie sheet.
7)  Bake for 10 -15 minutes.

This recipe makes about 2 dozen cookies.
