Leftover roast pork tenderloin is never a problem. In fact, I often enjoy thinly sliced pork in sandwiches even more. Today, I wanted to try the leftover pork with a combination of flavours. Onion is one of my favorite condiments and is must along with some mustard. To add some sweetness, I layered the pork inside a toasted cinnamon bagel that I thought would be complementary. This was definitely a winner for me! In fact, I think I need to make another one.....
Roast Pork with Onions on Cinnamon Raisin Bagel

Ingredients:
Pork Tenderloin, sliced thinly
1 cinnamon raisin bagel
1/2 onion, chopped
1 tablespoon oil
salt
Mayonnaise
Dijon mustard
Directions:
1) In a skillet, add oil and saute onions with a bit of salt until golden brown.
2) Toast bagel.
3) Create bagel sandwich layering pork tenderloin slices, onion with mayo and mustard to taste.
