Who doesn't like fried rice? It can be a complete meal on it own or just a side dish to complement another dish. Usually when we go to a Thai restaurant, we get plain white rice so as to enjoy the heavily flavored and tasty dishes even more. I am sure you will find many variations of this recipe and it is so easy to do.... so why not do it at home.
Thai Pineapple Fried Rice
(makes 4 servings)

Ingredients
2 cups cooked white rice
1 1/2 tablespoon oil
3 green onions, chopped (save green pieces for garnish)
1/2 large bell pepper, diced
1 1/2-2 tablespoon minced fresh ginger
1 small red chili
1 tablespoon curry powder
2 tablespoon soy sauce
1 cup diced pineapple
1/2 cup cashew
Directions
1) In a wok or a large skillet over high heat, add oil. Add green onions, bell pepper, ginger, and chili. Saute for 1 to 2 minutes. Add curry and saute for another minute.
2) Add cooked rice and soy sauce, and combine all flavors into the rice.
3) Add pineapple and cashews and stir for another 2 minutes.
4) Sprinkle with the remaining green onions
To kick it up a notch, you can add chicken and shrimp. I used this to complement another dish so I did not add chicken or shrimp.
