What's the best part of a muffin? Of course, it's the top. Anyone disagree? Then why do we bother making large muffins if it is really the top of it we enjoy most! Perhaps muffin tops taste better when they are part of a muffin rather than if they were baked independently. I decided to bake some muffin tops using my regular muffin recipe.
Ingredients:
1 3/4 cups all purpose flour
1/2 cup sugar
3 teaspoon baking powder
1/2 teaspoon salt
1/4 cup mini chocolate chips
1 egg
1/4 cup oil
1/4 cup milk
3 medium bananas mashed
Directions:
1) Mix the dry ingredients (flour, sugar, baking powder, salt, chocolate) well.
2) Beat egg. Add oil, milk and bananas and make sure it well-mixed.
3) Preheat oven to 400F.

4) Pour wet ingredients in middle of dry ingredients and stir only enough to moisten.
5) Place some of the batter into each individual indent of the muffin top pan.
6) Bake for about 12-15 minutes. Baking longer will give you a more crunchy muffin top.,
Makes about 12 - 14 muffin tops.
