Banana Dollar Pancakes



With kids, you often need to find ways to increase the amount of fruits and vegetables they consume.  This recipe sneaks in a banana without them noticing.  With my kids, they also tend to eat more when the pancakes are smaller.  Hmm....I wonder if our parents did the same when we were kids!

For an added touch, I often make a quick Berry Fruit Sauce to pour over the pancakes.

Banana Dollar Pancakes (for 4)

Ingredients:
1 cup white flour
1/2 cup whole wheat flour
3 tablespoon sugar
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1 egg
1 banana, mashed
butter
maple syrup
icing sugar (optional)
fruit sauce (optional)

Directions:
1)  In a medium size bowl, add both flours, sugar, baking powder, baking soda and salt.  Mix well.
2)  In a small bowl mix, add milk and egg.  Whisk.  Add mashed banana.  Whisk again.
3)  Pour wet ingredients into medium bowl.  Mix just enough until the wet and dry ingredients are combined.
4)  Using a large frying pan set on medium, melt some enough butter (about 1/2 tablespoon) to just coat the pan.
5)  Using a spoon, you can drop batter (about the size of a dollar (1 inch diameter) around the pan until there is no more space.  Be sure to leave enough space as you will need to flip them.  The pancakes cook very quickly!
6)  Serve immediately with maple syrup.  As an added touch, you can sprinkle icing sugar to top with a fruit sauce.
