Grilled Cheese and Tomato Sandwich



As a boy in Trinidad, there was very little cheese to be had.  The only cheese recall eating was the imported Laughing Cow cheese that came in a circular box with each triangle piece of cheese wrapped in silver foil.  Today cheese is plentiful to us.

Hmm...Grill cheese sandwich!!  Who can resist the a grill cheese sandwich where you can see the cheese and the steam oozing out.  I really like it when the tomato is softened by the heat.  There are a lot of people to take making grilled cheese sandwiches seriously.  I like to keep it simple, otherwise it takes too much effort.

Grilled Cheese and Tomato Sandwich

Ingredients:
Cheese, preferably grated
Tomato, sliced
2 slices bread
butter

Directions:
1)  Butter one side of each of the sliced bread.  The buttered side will form the outside of the sandwich.
2)  Add cheese to the un-buttered side of the bread covering the entire slice.
3)  Do the same with the tomato slices.  Top with the other slice of bread.
4)  In a skillet at medium heat, toast both sides of sandwich until golden brown and with the cheese melting.
