I love incorporating the use of fruits in my cooking. I have never made Duck a l'Orange, but hey I figured that if orange goes well with duck then it must also go well with chicken.
As I am writing this, I probably should have checked to see what typically goes into a Duck a l'Orange before roasting my chicken. I might have changed the ingredients I added to flavour the chicken. I have no regrets as it turned out great. The skimmed liquid was much tastier than I expected and was excellent when spooned over the chicken pieces.
Mandarin Orange Roast Chicken

Ingredients:
1 whole chicken (approximately 3 lbs)
1 mandarin orange cut in 4
4 garlic cloves, chopped
1 tablespoon honey + extra for basting
thyme or cilantro (optional)
butter
Directions:
1) Preheat oven to 375F.
2) Wash the chicken and pat it dry with paper towels.
3) In a small bowl, mix cut orange, garlic, honey and thyme or cliantro together.
4) Stuff mixture inside the chicken. Rub chicken skin with some butter.
5) Place chicken on a rack breast side down inside a roast pan.
6) Cook for 50 to 60 minutes or until the juices run clear between the leg and thigh. Be sure to baste as it cooks in order to give the chicken a nice colour. I typically will do a final baste of honey.
7) Be sure to let the roast chicken sit for at least 10 minutes before cutting.
8) Pour the liquid from the pan and the chicken into a serving bowl. Skim off the fat. Pour the liquid over the cut or carved chicken pieces.
