Banana White Chocolate Chip Mini Muffins


I tried one of my daughter's favourite recipe Banana Chocolate Chip Mini Muffins, but with a small twist.  I have always preferred eating white chocolate, maybe because it is very sweet or we don't eat it as often.

The verdict is the family prefers having the darker chocolate.  I think it is because there is more of a contrast in taste.  No matter which you choose, you cannot lose!

Banana White Chocolate Chip Mini Muffins

Ingredients:
1 3/4 cups all purpose flour
1/2 cup sugar
3 teaspoon baking powder
1/2 teaspoon salt
1/3 cup mini white chocolate chip
1 egg
1/4 cup oil
1/4 cup milk
3 medium bananas mashed

Directions:
1) Mix the dry ingredients (flour, sugar, baking powder, salt, chocolate) well.
2) Beat egg.  Add oil, milk and bananas and make sure it well-mixed.
3) Pour wet ingredients in middle of dry ingredients and stir only enough to moisten.
4) Place paper cups into mini muffin pan.
5) Preheat oven to 400F.
6) Fill paper cups.  Do not over fill as the muffin will rise.
7) Bake for about 12 minutes.

Makes about 50 - 60 mini muffins.

Notes:
1) This recipe will make about 12-14 regular size muffins.  Baking time will be about 20 minutes.
2) You can also vary the amount of chocolate and bananas to suit your taste.
