Homemade Bean Soup



Making homemade bean soup is so simple, everyone should give it a try.  After I eat this dish, I feel really good about myself for eating a healthy meal.  In the past, I have used all different kinds of beans.  This time, I used a bean mix that included barley.  The key to using only a few ingredients is to ensure you have a very flavourful broth.  I added homemade broth made using pork bones.


When we had it just after it was made, it was definitely a soup.  Below is a picture of the soup the next day.  It looks more like a risotto.  I normally only use the larger beans, but this time I used a mix that included a fair amount of smaller grains.  The next time I try a similar mix, I will use half the amount of beans.


Homemade Bean Soup

Ingredients:
900 grams (2 pounds) beans or bean mix
12 cups of broth
4 large carrots, chopped
salt and pepper to taste

Directions:
1)  In a large pot or a slow cooker, add both the beans and broth.  If cooking in a large pot, you will want to get the broth boiling, and then turned down to medium-low while it cooks.

2)  Add the carrots later so that it is not too soft when it's done.

2)  Near the end, add salt and pepper to taste.
