Quite often when I am making a prime rib roast, I will often make a sweet potato and pumpkin side dish. Today, I wanted to just sweet potatoes. I followed this Maple Mashed Sweet Potatoes recipe on About.com and decided to follow as it is basically the same as I do when tossing the ingredients together.
I found it a touch sweet. When I make my sweet potato and pumpkin side dish, I often do not add any sweetener as the sweet potato already provides enough sugar.
Maple Mashed Sweet Potatoes

Ingredients:
3 to 4 medium sweet potatoes, about 2 pounds
1/4 teaspoon salt
2 tablespoons butter
2 tablespoons maple syrup
cinnamon, to taste
3 to 4 tablespoons half-and-half or milk
Directions:
1) Cook sweet potatoes in boiling water until tender. Let cool slightly; peel.
2) Mash with salt, butter, and maple syrup.
3) Add cinnamon to taste then continue to mash with the milk or half-and-half to desired consistency.
Serves 4 to 6.
