French Breakfast Puffs for Everyone


French Breakfast Puffs is now my older daughter's favourite breakfast.  So I decided to make it on her birthday.  The original recipe used a cinnamon topping which she liked.  I wanted to surprise her a little and decided to pick up some red sprinkles to use as toppings.  It was a hit!  No surprise as I know she loves powdered sugar.




Ok, since I am recycling a recipe I might as well try adding in some walnuts to a few of the ones with cinnamon topping.  That went over well!

French Breakfast Puffs

Ingredients:
1/3 cup butter, soft
1/2 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup milk
1 1/2 cups flour
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/4 tsp nutmeg
1 1/2 teaspoon melted butter
2 teaspoon cinnamon sugar or red sugar sprinkles
walnuts (optional)

Directions:
1)  Cream butter and sugar till fluffy. Add egg, vanilla, and milk. Stir in dry ingredients just till moistened.
2)  Preheat oven to 350°F.
3)  Fill greased muffin cups about 2/3 full.  Bake for about 18 minutes.
4)  While still warm, roll the top of the puffs in melted butter, then in cinnamon sugar or red sprinkle mixture.

Makes 10-12 puffs

Notes:
If you are rolling the entire muffin in butter, you will need about 1/3 cup, and more cinnamon sugar of course.
