Coconut, Walnut and White Chocolate Banana Bread

CoconutWalnutWhiteChocolateBananaBreadSlice500.JPG

I have tried many different banana bread recipes but have not found one yet that I could not resist.  I have to say that this one from the For The Love Of Cooking comes pretty close.  The biggest reason is probably all the extra stuff that is tossed in such as nuts, coconut and chocolate.  This definitely worth trying again.

Below you will find the original recipe as well as the adjustments I made. What would I do different? I would use 1/2 cup white mini chocolate chips and reduce the sugar slightly.  I also need to make sure that I have macadamia nut on hand.

Coconut, Macadamia Nut, and White Chocolate Banana Bread
Printable Recipe
1/2 cup of butter, softened
1/2 cup of white sugar
1/2 cup of brown sugar
2 eggs
1 teaspoon vanilla
1 cup of flour
1/2 cup of whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup very ripe bananas, mashed (approx 2 bananas)
1/2 cup of sour cream
1/2 cup white chocolate chips
1/2 cup sweetened shredded coconut
1/2 cup of macadamia nuts, chopped

Directions:
1) Preheat the oven to 350 degrees. Coat a loaf pan with cooking spray.
2) Place the butter, sugar, vanilla, and eggs together in a bowl and beat with a mixer on low until creamy. Combine the dry ingredients in a separate bowl and mix well. Slowly add the flour mixture to the sugar mixture. Add the bananas, sour cream, chocolate chips, coconut, and macadamia nuts, stir well to combine. Pour into the prepared loaf pan.
3) Bake for 1 hour or until a tester inserted into the center comes out clean. Cool on a rack. Slice and serve slathered with butter if desired.

Adjustments I made:
1) I used 3/8 cup of butter
2) I used 1/4 cup white mini chocolate chips
3) I like nuts so I used 1 cup of nuts (mixed of pecan and walnuts)
4) I like coconut....guess what? I used 1 cup coconut
