Making your own salad dressing is so easy, yet I rarely do. It might be that whenever I think of a meal, it is all about the meat.....with the salad an afterthought. Today, I figured I would make my own vinaigrette. I used the dressing I spotted on For the Love of Cooking. All was except for the amount of poppy seeds. It was way too much for my liking.
Strawberry Spring Mix Salad with Poppy Seed Vinaigrette

Ingredients:
Salad
10 ounces spring mix or baby spinach
2 cups of sweet strawberries, chopped
Poppy Seed Vinaigrette:
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon lemon juice
1-2 teaspoon sugar
1/2 tablespoon poppy seeds
Directions:
1) Place the spinach in a bowl and top with the diced cucumbers, green onions, and strawberries.
2) Combine the olive oil, apple cider vinegar, lemon juice, sugar, and poppy seeds in a small bowl and mix until well combined.
3) Pour the dressing on top of the salad and toss well until evenly coated. Serve immediately. Enjoy.
