It has been so hot this summer that this side dish is the perfect addition for a summer BBQ. If your guest don't realize how good this is, it makes for great leftovers.
Couscous with Cranberry and Mandarin Orange
(adapted from Pillsbury Picnics and Grilling)

Ingredients:
1/2 cup uncooked couscous
3/4 cup water
1/2 cup dried cranberry
1 (11 oz) can mandarin orange, drained
1/2 cup walnut
Dressing
2 tablespoon lemon juice
1 tablespoon honey
1/2 teaspoon grated orange peel
Directions:
1) In small saucepan, combine cranberry and water. Bring to a boil. Remove from heat; stir in couscous. Cover; let stand 5 minutes.
2) Meanwhile, in small bowl, combine all dressing ingredients; blend well. Set aside.
3) Add orange segments to couscous mixture. Cover; refrigerate 1 hour or until well chilled. Just before serving, drizzle with dressing; stir to blend. Spread walnuts on top.
