Today was one of those days where an ingredient was looking for a breakfast recipes. With these wonderful raspberries from our backyard, I just had to use them in a recipe. I opted for this Blackberry Pancake Tart recipe on Scandie Foodie but using raspberry instead. Unfortunately it did not look as good or taste as good as I had hoped.
Raspberry Pancake Tart

Ingredients:
3 large eggs
3 tablespoons brown sugar
1 1/4 cups milk
2/3 cups flour
250 grams fresh raspberries
1 tablespoons brown sugar
Directions:
1) In a bowl, lightly beat the eggs with the sugar. Add milk and flour and whisk until smooth. Set aside for about 10 minutes.
2) Heat the oven to 400F. Pour the batter into a pie dish and bake for 15 minutes.
3) Remove the pie from the oven, top with raspberries and sprinkle the extra sugar on top. Bake for another 10-15 minutes. Let cool completely before serving.
