It has been quite some time since i made a puffed pancake. As I often do, I like to try different variations. This Puffed Apple Pancake on Dinner with Julie fit the bill. It tasted as good as I ever made before. Of course, you must have some type of fruits to top it off. Puffed pancakes are a hit any time I make it.
Puffed Apple Pancake

Ingredients:
3 large eggs
3/4 cup all-purpose flour
3/4 cup milk
2 apples or pears
1-2 tablespoons canola oil
1-2 tablespoons butter
1-2 tablespoons sugar or honey
Pinch cinnamon
Maple syrup or vanilla yogurt for serving (optional)
Directions:
1) Preheat the oven to 450°F. Place the empty baking pan into the oven to get hot.
2) In a bowl, whisk together the eggs, flour, and milk. Don’t worry about getting all the lumps out. Pour the batter into the pan in the oven. Bake for 20-25 minutes, until the pancake is puffed and golden.
3) A few minutes before the puffed pancake is ready, core and slice the apples. In a large skillet, sauté the apples in the oil and butter over medium heat for a minute or two. Sprinkle them with the sugar and cinnamon and cook until they start to turn golden. Remove them from the heat.
4) Add the apples on top of the puffed pancake.
5) Cut it into wedges and serve warm. Serves 4.
