I have been wanting to make waffles for some time now. The kids eat the store-bought frozen ones all the time. I am sure I could make something they would like. My opportunity has come. On one of my visits to my parents I discovered they still had a waffle iron maker that my Mom made waffles when my brother and I were kids. My memory is foggy and I don't recall eating waffles. I hope that is not a bad omen.
My Mom was only to happy to give me the waffle iron. Unfortunately it did not come with any recipes or instructions. A bit of searching on internet was futile. Hmm....I wonder how old this is!
I found what I thought looked like a good recipe on Cooking Nook. As you see by the first few waffles I made, I was learning to use the waffle iron. I got the hang of it after I messed up the first three.
I am sure they will turn out much better next time!
Waffles

Ingredients:
2 eggs, separated
1 1/2 cups milk
2 cups plain flour
2 teaspoons baking powder
1/4 cup sugar
2 ounces butter, melted
2 tablespoons cold water
Directions:
1) Beat egg whites until soft peaks form. Beat egg yolks and milk lightly together. Add sifted dry ingredients and beat until smooth. Add melted, cooled butter and the water. Blend well. Fold in the beaten egg whites.
2) Heat the waffle iron. Brush both top and bottom surfaces of waffle iron with a bit of oil. Spoon approximately 2 tablespoons of the waffle mixture into the center of the iron. Close the iron, cook until golden brown, about 1 minute (exact timing depends on your waffle maker. Follow their directions for perfect results).
3) When the waffle is ready, all of the steam will have stopped emerging from the iron. If you try to lift the top of the iron and the top shows resistance, it is not quite done. Cook 1 minute longer and try again.
Makes about 10 waffles.
Note:With some waffle irons, the mixture needs to be spread to cover surface of iron.
