Welsh Cakes

Darby Cakes

Maybe I have been under a rock, but I had never heard of Darby Cakes or Welsh Cakes before. So when I say the Darby Cakes or Welsh Cakes recipe on Radishes and Rhubarb, I had to keep reading, and then I had to try myself. The best description I found is that is it like a scone but in the form of cookie. I would agree that they taste great either warm or cold. I decided to make them smaller and in different shapes for the girls. I also substituted currants for cranberries.

1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cold butter
1/2 cup sugar
1/2 cup cranberries
1/4 teaspoon ground coriander
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 egg, beaten
About 2 tablespoon milk
Oil for the pan

Directions:
1)  Whisk flour, salt and baking powder in bowl.  Cut in the cold butter with a pastry cutter or hands until the mixture resembles course crumbs.  Add the sugar, cranberries and spice, stirring to mix.
2)  Add the egg and enough milk to form a soft but not sticky dough.
3)  On a lightly floured surface, roll out the dough to a thickness of 5mm.  Cut into rounds with a 2 in round cookie cutter.
4)  Heat the griddle or a heavy frying pan and grease with a little oil.  Cook the cakes on the griddle or pan on low heat for about three minutes per side or until golden brown and cooked through.  Leave to cool on a wire rack.  Sprinkle with a little sugar wPublish Posthile still hot, if desired.
