Thai Baked Chicken

I LOVE Thai food but almost never make it at home.  I decided on trying a Thai-style chicken. This recipe is really intended for the BBQ.  Since it is winter now, I tried it in the oven.  I used a whole chicken that I chopped to pieces.  The flavour was fantastic and suited my palette perfectly.  The only change I will make next time is to use dark meat that has a lot of bones.  These pieces seemed to attract a lot more of the flavours.  The white meat had little flavour from the marinade and depended on just the additional sauce I made.

Thai BBQ Sauce

Thai-style Chicken

Ingredients:
1 chicken (3-4 pounds), quartered
1 can coconut milk
6 tablespoons fish sauce
2 teaspoons tumeric (or curry) powder
2 teaspoons hot sauce
1/2 head garlic, minced

Directions:
1) In a large bowl big enough to whole all the chicken, mix all the ingredients except for the chicken together.
2) Add the chicken and marinate for at least 1 hour
3) Preheat oven to 400F.
4) Place the chicken in a baking pan, skin side up. Bake for about 30 minutes.
5) Broil (on low if possible) for about 10 minutes to give the chicken a nice crispy skin.
6) Serve with Thai BBQ Sauce

Thai BBQ Sauce
Ingredients:
6 tablespoons water
4 tablespoons vinegar
4 tablespoons sugar
1 teaspoon garlic, minced
1/2 teaspoon chili paste
1/4 teaspoon salt

Directions:
1) In a small pot, add all ingredients and bring to a boil. Cook for 5 minutes until reduced by at least 50%. Cool and serve with your favourite Thai recipe.
