Apple Cake

So one of my daughter loves strawberries, and the other loves apples.  Today is an Apple day.  This apple cake recipe on Dash looks just like an upside down cake, except the apples are not not on the bottom.  This was supposed to be an easy, quick breakfast.  Unfortunately I needed 50 minutes instead of 25 in the original recipe.  However I must say it was more than worth the wait!  The cake was moist and delicious.  The ratio of cake to fruit was just right!  Needless to say, this cake did not last long!

Apple Cake

Ingredients:    
1 1/2 cups flour
2 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar, divided
1 egg, well beaten
1/2 cup milk
1/2 cup butter, melted
3 tart apples, peeled, cored and cut into eighths
1/2 teaspoon cinnamon

Directions:
1)  Preheat oven to 350°F.  Line a 8x8x2 or 10x6x2 pan with parchment paper, or grease pan with butter.
2)  In a large mixing bowl, sift together flour, baking powder, salt and 1/2 cup sugar.
3)  In a separate bowl, mix together egg, milk, and butter.  Stir mixture gently into dry ingredients.
4)  Pour batter 3/4 inch thick into baking pan.  On top of batter, layer apple wedges in parallel rows.
5)  Mix 1/2 cup sugar with cinnamon.  Sprinkle over apples.  Bake for about 50 minutes, or until apples are tender.

Note:
I had to make a few adjustments to the original recipe.  The cake needed 50 minutes instead of 25 in the original recipe.  I also only need 3 apples not 5, and they weren't that big either.  Next time, I would cut the apples thinner, perhaps sixteenths.  It would then be easier to layer and may reduce the bake time.
