Even though I really enjoyed the Apple Cake I made recently, I wanted to experiment with others.  When I hear this Apple Cake on Big Bold Beautiful Food was a recipe that was passed down, I definitely wanted to try.  It also has a more rustic homemade look to it.

When I think of my grandma, she has literally no teeth right now, so there would be no way she could eat this cake.  It is a much more dense cake!  While I did not enjoy this one as much, my daughter who loves apple liked this one more than the other one.

Ingredients:
3 cups flour
1 1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs, beaten
1 cup vegetable oil
2 cups sugar
2 tsp. vanilla
4 cups chopped apples (about three large apples; I prefer Granny Smith apples)
1 cup chopped walnuts (optional)

Directions:
1)  Preheat oven to 350F. Grease and lightly flour a 9 1/2 x 13 inch pan and set aside.
2)  In large bowl, sift together flour, baking soda, salt and cinnamon. Mix to mix sure ingredients are distributed.
3)  In another bowl, mix together eggs, oil, sugar, vanilla, apples and walnuts.
4)  Add wet ingredients to the dry ingredients and mix together until incorporated.  The batter will be thick, as when it cooks, the apples will provide the necessary moisture to the cake.
5)  Spread the batter out in the pan.  Bake at 350F for 45 minutes to an hour.  The cake will be done when it's nicely browned on top and when an inserted toothpick comes out clean.
