Mini Potatoes with Mustard Dressing

Normally I would just roast these mini potatoes after tossing them with oil, salt and pepper.  I wanted to try something a bit different, something with more flavour.  I opted for a mustard dressing.  This was good but the flavour was still not enough for my taste.  I was impressed enough that I will give this another try but intensifying the flavour some more.

Mini Potatoes with Mustard Dressing

Ingredients:
2 bags of small red potatoes, halved
salt and pepper to taste

Dressing
4 tablespoons dijon mustard
2 tablespoons honey
4 tablespoons extra olive virgin oil
salt and pepper to taste

Directions:
1)  On a baking sheet, toss the potatoes with 2 tablespoon oil, salt and pepper.
2)  Roast potatoes at 400F for 15 minutes or until just fork tender
3)  In a small bowl mix together all the ingredients for the dressing. Transfer potatoes to a bowl. Add mustard dressing and mix. Serve warm.
