Again, I am sucker for well-named food recipes.  This time is called Impossible Pie from Food and Wine.  So what is Impossible Pie?  Well, it seems when all the ingredients are mixed together and poured into a pie plate, a beautiful crust is created once it is baked.  I love simple recipes, so why not give this one a try.

This is definitely for those who have a sweet tooth.  It tasted great, but even for me it could have been less sweet....so either reduce the sugar or use a mix of sweetened and unsweetened coconut.  It is definitely a try again recipe...after all, it is so simple!

Impossible Pie

Ingredients:
4 tablespoons unsalted butter, melted, plus more for greasing
2/3 cup sugar
2 large eggs
1/4 cup self-rising flour
1/2 teaspoon baking powder
1 cup sweetened shredded coconut
1 cup milk

Directions:
1) Preheat the oven to 350°F and butter one 9-inch glass pie plate.

2) In a large bowl, whisk the melted butter with the sugar. Add the eggs and beat until smooth. Stir in the flour, coconut and milk. Pour the mixture into the pie plate and bake in the lower third of the oven for about 1 hour, until the pie is firm to the touch and golden. Transfer the pie to a rack and cool completely before serving.
