I love the banana coconut bread that we bake and eat most of the time, but wanted to have a few other good options available. I decided to give this blueberry coconut banana bread from Blueberry Octopie a try. The only problem is that we had no blueberries. We do have peach, so I decided that would be a good substitute.
The bread turned out great! I do think blueberry might be a better choice....but perhaps if I added more peach....
Banana Coconut Peach Bread

Ingredients:
1 cup coconut flakes
1/4 cup butter
1/3 cup sugar
2 eggs
3 tablespoons milk
2 tablespoons yogurt
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (2 bananas)
2 peaches, peeled and chopped
Directions:
1) In a medium to large bowl, beat together the butter and sugar. Add in the eggs one at a time. Stir in the milk, lemon juice, and vanilla extract.
2) In a separate bowl mix the flour, baking soda, baking powder, and salt. Slowly add the flour mixture to the wet ingredients.
3) Fold in the mashed bananas and coconut flakes.
4) Bake at 350 degrees for 1 hour, until golden brown. Let cool for at least 10 minutes.
