Cassava is yet another root vegetable that I had as a child in Trinidad. As it is a starch, Cassava works well anywhere you might use potatoes. I think it compliments any of the stews we eat. If this does not appeal to you, then you can always use it in a dessert like Cassava Pone.
Boiled Cassava

Ingredients:
1 - 2 lbs Cassava (fresh peeled or frozen)
1 teaspoon salt
Directions:
1) Place the cassava in a large pot adding enough water to just cover. Optionally add a bit of salt.
2) Cover over medium heat until fork tender and take out before it becomes mushy. Depending on the size of the of the cut pieces, it will take about 30 minutes.
